Arkansas had already taught me that queso answers to cheese dip here. Then The Fold handed me a bowl of spicy white habanero queso with bison in it and basically asked how far I was willing to follow this thing. Pretty far, apparently. Add the great nonalcoholic margarita I had alongside it and this was my kind of research stop: colorful, unexpected and just weird enough to earn permanent space in my cheese-soaked memory. The Fold lives in an old filling station, which feels almost suspiciously perfect. Pull in. Fuel up. Continue queso quest.
