Sopapilla's
Roasted Hatch chiles and yellow queso carry a Southwestern family story from post-show Fiesta Nights to Cool Springs.
The Queso Connection
Before there was a restaurant, there were post-show Fiesta Nights. Dale missed the Southwestern and New Mexican food that tasted like home, so he started cooking it for his bandmates while touring. Those gatherings grew, and in 2010, Sopapilla’s followed. More than 15 years later, roasted Hatch chiles still run through the menu and straight into this bowl of yellow queso. It became part of my story, too. I ate here with my mom and Fred, and I got to share this table with my dad. Different visits. Different chapters. Same familiar bowl arriving in the middle. You can order the same queso, but you can never quite recreate the same table.
WHAT TO ORDER
The queso briefing
Chile Con Queso + chips.
This is one of my favorite classic yellow quesos in Franklin. Assorted cheeses melted with house spices, onion and roasted Hatch chiles (a key to a superior queso, in my book). Add brisket if the spirit moves you.
“From post-show Fiesta Nights to a Franklin table, this queso started with a musician missing the taste of home.”
