Rosie’s Mexican Cantina
A Huntsville classic with yellow and white queso, deluxe bowls, and a family-sized helping of local food memory.
The Queso Connection
This one sits almost directly across the road from one of my teenage era Huntsville food memories: celebrating with the Sparkman High School Spanish Club. Decades later, I came home to find the original flavors of Rosie’s we knew and loved well still here, still pouring queso. Some trails really do circle back. ;) Rosie’s serves both its classic yellow Chili Con Queso and a white Queso Blanco, plus deluxe versions of each with taco beef and pico. For the Trail, I’m starting with the yellow bowl that feels most like the Huntsville classic. There’s also a fun future mini-entry hiding here: their Jalapeño Mac & Cheese Bites are served with queso, which is exactly the kind of gloriously unnecessary cheese-on-cheese side quest this Trail was born to document.
WHAT TO ORDER
The queso briefing
Chili Con Queso
Rosie’s classic yellow queso, made with a blend of cheeses, tomatoes and peppers. This is the baseline bowl, the one that tastes just like 1998 Huntsville to me.
“a standard chili con queso”
DELUXE CHILI CON QUESO
the classic chili con queso loaded with spicy taco beef and pico. More texture, more heft, and the version to order when you want your queso to start acting like a meal
MEXICAN REFRIED BEAN DIP
Refried beans swim alongside creamy queso blanco -- I call this one a protein loaded dinner replacement queso. ;)
