The Queso Connection

Rosa Mexicana Cocina brings a taste of Oaxaca to Huntsville's Drake Avenue, and there's plenty here to explore beyond the usual bowl of cheese dip. The house-specialty Rosa Dip comes loaded with steak, chicken, chorizo and pico de gallo, while the choriqueso offers another route into melted-cheese territory. But what really caught my attention was the tlayuda. I've long loved these oversized Oaxacan specialties, built on crisp tortillas layered with beans, cheese and other toppings. Finding them on a Huntsville menu is reason enough for me to investigate. We haven't visited yet, but Rosa has officially landed on my research radar. I'm coming for the queso, but there's absolutely a tlayuda in my future.
