Green Chile / Late-Night Queso
Mother's Ruin
Mother’s Ruin: because sometimes the answer is queso at a dive bar
The Queso Connection
I wrote about Mother's Ruin's green chile queso before the Nashville location even opened. Back in 2019, I was covering the arrival of the New York-born bar in Germantown for Eater Nashville, including its promise of a kitchen that stayed open absurdly late. Mother's Ruin was built around an unpretentious philosophy they called “hospitality over ego,” and that still feels like the place: loud, loose, come-as-you-are, open until 2 a.m. every single day of the year. And the queso survived. Green chile queso, corn chips, scallions, lime. Add chorizo if that's where the night is headed. Or abandon all restraint and get it poured over the Old Bay-adjacent world of Mother's waffle fries with chorizo, crema, pickled Fresnos and cilantro. There is something wonderfully strange about building this Trail and realizing how many of its breadcrumbs I left before I knew I was making a trail.
WHAT TO ORDER
The queso briefing
Green Chile Queso
Green chile queso with corn chips, scallions and lime, with chorizo available as an add-on. It has survived from the original Nashville menu into the current one. The kitchen also now deploys that queso over Loaded Queso Waffle Fries with chorizo, scallion crema, pickled Fresnos and cilantro, and at brunch over housemade hash brown bites.
“Apparently, I was reporting from the Queso Trail before I knew it existed.”
