Housemade Chips / Chile Con Queso
Mi Dia From Scratch
Queso, enchiladas, Christmas-style chiles, and a first taste of huitlacoche made this North Texas favorite a food rabbit hole.
The Queso Connection
Mi Día was one of my favorite places when I lived in North Texas, but what I remember most isn't just loving the food. It's getting completely fascinated by it. I tried huitlacoche here for the first time and promptly hyperfocused on this strange, earthy ingredient I'd somehow gone my whole life without knowing. I loved the Christmas-style red-and-green-chile dishes, the queso, the enchiladas, all of it. That's one of my favorite things food can do: you sit down hungry and get up with something entirely new to wonder about. Mi Día didn't just feed me. It gave me another rabbit hole.
