Ark-Mex / Yellow / Cheese Dip / Little Rock
Heights Taco & Tamale
Yellow Rock Cheese Dip is unapologetically old-school Arkansas—add housemade chorizo and lean into the Ark-Mex vocabulary.
The Queso Connection
By the time I got to Heights, I understood that Arkansas wasn't merely serving its own version of queso. It had built an entire language around cheese dip. And Heights takes that language and has fun with it. Yellow Rock Cheese Dip feels like a wink at the state itself: unapologetically yellow, wonderfully old-school, and waiting for a pile of housemade chorizo. This is exactly what I mean by Ark-Mex. Not Tex-Mex with a different ZIP code. Arkansas took the genre, fed it its own stories and sent it back out wearing a Razorback-red passport.
WHAT TO ORDER
The queso briefing
Yellow Rock Cheese Dip
Now we're getting deep into Arkansas cheese-dip country. Heights calls its version Yellow Rock Cheese Dip, a gloriously golden bowl built from American cheese and a house blend of spices, served with tortilla chips. You can add housemade chorizo, which feels less like an option and more like a suggestion from the universe.
