Queso Blanco / Nashville
Edley's Tacos
Barbecue DNA meets taco-shop comfort, with familiar queso blanco alongside brisket, carnitas, and chicken tinga.
The Queso Connection
I wrote about this Sylvan Park address becoming Pancho & Lefty’s back in 2018. Years later, when Ryan and I first met, he started working here. We lived close enough that I could walk over, and I loved doing exactly that for tacos and a bowl of their white queso. Now Pancho & Lefty’s has become Edley’s Tacos, but the address remains part of our Nashville map. The current menu folds Edley’s barbecue DNA into the taco shop, with chopped brisket braised for 10 hours, smoked pork carnitas, chicken tinga and a salsa bar alongside that familiar queso blanco.
WHAT TO ORDER
The queso briefing
Queso Blanco
Classic white queso built to go with basically everything on the menu. And here, that really does mean everything: the Alambre tacos are smothered in housemade queso, nachos pile it onto your choice of protein with black beans, pico, crema and jalapeños, and even the poblano mac and cheese wanders into our extended cheese universe.
“I wrote about this address before I knew it would become part of our story.”
