On Cookeville's downtown square, locally owned CH Steak Lounge brings steaks, live music and an unexpectedly versatile spinach artichoke dip to the table. Beyond the appetizer itself, the kitchen uses the dip on its Pizza Rockafella with chicken, sun-dried tomatoes and jalapeños, a Philly-inspired pizza with ribeye, and a spicy veggie quesadilla. We're especially intrigued by the Pizza Rockafella. Around here, the Queso Trail isn't limited to a bowl of yellow or white cheese. Sometimes the most interesting discoveries are hiding elsewhere on the menu.

A little heat, plenty of cheese and proof that some dips have bigger ambitions than being appetizers.
