The Queso Connection
Not all queso comes in a bowl. At Casa MX, a Mexico City-inspired restaurant tucked into a former home along Miami's Coral Way, the queso fundido combines melted Oaxaca cheese with poblano peppers and warm tortillas. Add green chorizo for an especially intriguing twist. It's the kind of regional cheese preparation that makes our Queso Trail more than a collection of Tex-Mex dips. Opened in January 2026, Casa MX also offers duck confit flautas, huitlacoche quesadillas and an adventurous menu worth exploring beyond the cheese. We haven't tasted this one yet, but green chorizo and stretchy Oaxaca cheese have officially earned a spot on our South Florida radar.
