Casa Mama
White queso and spinach enchiladas mark one of Delia’s solo-table chapters while learning a new city and a new life in Texas.
The Queso Connection
When I moved from Nashville to Texas, Casa Mama became one of those places I returned to again and again, often by myself. I loved the queso, but I especially remember pairing it with the spinach enchiladas. There is something important to me now about remembering those solo tables. I was learning a new city and a new version of my life, and food gave me somewhere to begin. Years later, building the Queso Trail, I can see that those meals were already little pins on a map I didn't know I was making.
WHAT TO ORDER
The queso briefing
Queso
classic white queso with just the right amount of heat. Start with the regular queso or turn it into Queso De Casa with beans, jalapeños and pico. Then keep going if you want: ground beef, brisket and chorizo can all join the bowl. This is the kind of Texas queso menu that understands the bowl is really just a starting point.
